Fat PS3 is the PS3.
All PS3s can play PS1 discs. Only the early fat ones can play PS2 discs. All models can play any of the digital classics on the store. If it says "Playable on PS3" it works on any PS3. If you mod it then it will be compatible with almost all ps1 games and 75+% of ps2 games. The PS5 Slim size, as the name suggests, is indeed thinner than the original PS5. PlayStation has revealed the official PS5 Slim dimensions for both the new standard PS5 and the new PS5 Digital

AFAIK, Sony only included composite cables in every PS3 model from beginning to end. From the original model all the way to the Super Slim. No reason for it really but it was super convenient if you had a PS1 or PS2 around and needed them.
